Easy Crockpot Pulled Chicken

Now that time is of the essence, my handy dandy crockpot/slow cooker will be back in the dinner time routine.

I absolutely love using a crockpot. I always opt for easy recipes that don’t require much fuss. That way I can just throw in my ingredients, set the timer and go! The best part of using a crockpot is coming home to a hot dinner that is ready to eat! It’s really awesome 🙂

Here’s my favourite recipe for Easy Crockpot Pulled Chicken. It’s what we ate in my house tonight!

Ingredients:

4 boneless skinless single chicken breasts

1 jar of your favourite bbq sauce

1 package of onion soup mix

buns

 

1. Place chicken breasts in a single layer on the bottom of your crockpot.

2. Sprinkle the entire package of onion soup mix evenly over the chicken.

3. Pour bbq sauce evenly over chicken. Make sure it’s well coated in sauce.

4. Cover your crockpot and set it to cook on high for 5 hours or on low for 8 hours.

5. Once your cooking time is done, take two forks and pull away at the chicken. The chicken should easily shred. If there is too much sauce you can put leave the lid off of the crockpot and cook on high for 15-20 mins. This will boil off some of the extra sauce.

6. Place on bun. If you don’t want to put it on a bun, you can put it on top of quinoa, rice or couscous.

7. Enjoy!

Tonight I served the pulled chicken with roasted cauliflower and an arugula salad. Usually I serve it with coleslaw or broccoli slaw.
