Corn and Feta Salad

There is nothing better to me than fresh summer corn. After boiling it it’s always so crisp, sweet and juicy. I really can’t get enough. Truth be told, I could eat 3 cobs of corn in one sitting. That’s how much I love it! The Hubster also loves corn and so far Princess Peach seems to love corn too!

This past weekend for Victoria Day we were 1.5 hours away from Toronto in the country. On a whim, my mom bought corn to make for dinner and to our surprise it was delicious! It’s not even corn season yet so I can only imagine how incredible the corn is going to taste this summer.

A few years ago one of my sister-in-laws started making this amazing corn salad. It is very addicting. It blends, corn, butter, garlic, lime, salt and feta cheese together. What could be bad about it right? After my first few times having it I started to make it myself. The Hubster usually requests that I make it all summer long. This salad is the perfect accompaniment to any summer BBQ.

When we left the country we bought loads of corn and I made a huge bowl of corn and feta salad tonight. Here is the recipe. I hope you love it as much as we do!

 

Corn and Feta Salad:

12 cobs of cornIMG_4115[1]

1/3 cup butter melted

3 cloves of garlic- crushed

1/2 juice of a lime

200 grams of low-fat feta cheese

kosher salt to taste

 

 

 

Directions:

1. Fill up a large pot with water and bring to a boil. While you are waiting for the water to boil, husk all 12 cobs of corn.

2. When water is at a rolling boil, place all of the corn into the water. Bring water back to a boil and cook for 18 minutes.

3. Take corn out of pot and place into a boil or on a cutting boil to cool.

4. When the corn is still warm but cool enough to the touch, cut the kernels of corn off of the cob. Place all the cut pieces into a large mixing bowl.

5. Once all of the corn kernels are in the bowl, add 1/3 cup melted butter and gently toss the corn to coat in the butter.

6. Then add the lime juice, and garlic.

7. Crumble the feta into small pieces and add to the bowl. Taste and then kosher salt as needed.

8. Lightly toss everything together in the mixing bowl.

9. Serve and enjoy!
